Saffron Rice with Spiced Beef
This is hands down one of the best dishes you will ever have! Saffron rice paired with spiced meat mixture is guaranteed to land on your “top favorites” list! Serve with a side salad and you have yourself a quick, easy, and flavorful dinner!
Ingredients
Saffron Rice
- 2 cups2 cups2 cups Basmati Rice, organic
- 2.5 cups2.5 cups2.5 cups Beef Bone Broth (Bonafide Provisions), or water
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Sea Salt
- 0.5 tsp0.5 tsp0.5 tsp Saffron, crushed
- 0.125 tsp0.125 tsp0.125 tsp Turmeric
Seasoned Beef
- 1.5 lb1.5 lb1.5 lb Ground Beef, grass-fed
- 1 tsp1 tsp1 tsp Sea Salt
- 1 - 1.5 tsp1 - 1.5 tsp1 - 1.5 tsp Curry Powder
- 1.5 tsp1.5 tsp1.5 tsp ground Allspice
- 1 whole1 whole1 whole Yellow Onion, finely chopped
- 3 Tbsp3 Tbsp3 Tbsp distilled White Vinegar
- 0.25 cup0.25 cup0.25 cup Tomato Paste
- 0.75 cup0.75 cup0.75 cup Flat Leaf Parsley, Fresh, chopped (use less if using dried)
- 1 - 2 cups1 - 2 cups1 - 2 cups Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Saffron Rice:
- Rinse and soak rice in cold water until water is clear.
- In a medium sized pot, add all rice ingredients except for rice. Bring to a boil on high heat, then add rice to boiling mixture. Give everything a little stir, then lower heat to medium immediately after. Place lid on pot.
- Cook on medium heat for 6-7 minutes.
- Without removing lid, turn heat to low and allow to cook for an additional 10 minutes until rice is cooked and fluffy.
- Seasoned Beef topping:
- Place meat in stainless steel saucepan and cook on medium heat until all liquid has evaporated.
- Add salt, curry, all spice, and onion. Brown meat and onion for a few minutes.
- Once onion has cooked through, add about 1/2-1 cup of water, along with the vinegar and tomato paste.
- Add fresh parsley and allow meat mixture to simmer. Add more or less water depending on how runny you prefer your meat mixture - we prefer the extra liquid!
- Serve seasoned meat over saffron rice and enjoy this comforting meal!
