brown butter protein cookies loaded with coconut flakes, crunchy pecans, & BTR's dark chocolate coconut cups… all sandwiched with salty grain-free pretzels for that elite crunch factor AND dipped in a divine salted chocolate protein caramel.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

protein cookie pretzel sandwich

  1. preheat oven to 350.
  2. follow my instructions for making my grain-free protein cookies (fold in the coconut, pecans, & chocolate for add-ins), then place cookie dough in refrigerator for 30 minutes.
  3. place a fit joy pretzel on a baking sheet, then add a 1 t cookie scoop of cookie dough on top.
  4. lightly press another fit joy pretzel on top.
  5. bake cookies for 12-14 minutes (they will pour over your pretzel).
  6. allow to slightly cool then using a small round object shape your gooey cookie more around the pretzel to make little bites.

salted chocolate protein caramel + toppings

  1. in a sauce pan over medium heat, melt butter & brown.
  2. stir in remaining “protein caramel” ingredients & mix until everything is dissolved.
  3. transfer to a bowl.
  4. in a separate bowl, add finely crushed coconut, pecans, & chocolate.
  5. dip each cooled protein cookie pretzel sandwich into protein caramel, crushed coconut, pecans, & chocolate.
  6. place on a lined baking sheet & refrigerate for at least 30 minutes to allow caramel to set.
  7. ENJOY!!!
