Savory Zucchini Waffles
Crispy on the outside, tender inside—these Savory Zucchini Waffles are packed with za’atar spice, high-protein, and completely flourless. Made with eggs and zucchini, they’re the perfect gut-friendly, gluten-free breakfast or snack, especially topped with a runny fried egg.
Ingredients
- 4 whole4 whole4 whole Zucchini, grated, patted dry (about 6 cups)
- 4 whole4 whole4 whole Eggs
- 0.25 cup0.25 cup0.25 cup Coconut Flour, flax meal also works well
- .25 cup.25 cup.25 cup Parsley, finely chopped
- 2 Tbsp2 Tbsp2 Tbsp Za'atar Seasoning
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 pinch1 pinch1 pinch Salt and Pepper

- Grate the zucchini and squeeze out as much liquid as possible using a cheesecloth or clean towel.
- In a bowl, whisk eggs. Add zucchini, flour/flax meal, za’atar, garlic, salt, and parsley (if using). Stir until combined. The batter should be thick but spoonable. Let sit for 3–5 minutes to thicken.
- Spray waffle maker with olive oil Scoop batter and cook until done.
- Top pancakes with eggs, tahini and more seasoning.
- Sprinkle extra za’atar or fresh herbs if desired.
