Shahi Tukda || Indian Bread Pudding (Gluten Free, Dairy Free)
A decadent bread pudding with the flavors of saffron and cardaomom that is fit for royalty and that is gluten and dairy free!
Ingredients
- 0.75 cup0.75 cup0.75 cup Organic Coconut Milk - Thrive Market
- 0.25 tsp0.25 tsp0.25 tsp Cardamom, Ground
- 0.25 tsp0.25 tsp0.25 tsp Saffron
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 0.75 tsp0.75 tsp0.75 tsp Organic Arrowroot Powder - Thrive Market
- 4 Tbsp4 Tbsp4 Tbsp Ghee, or grassfed butter
- 4 pieces4 pieces4 pieces Gluten-Free Bread, Schär brand, cut into triangles
- 2 Tbsp2 Tbsp2 Tbsp Raw Honey
- 2 Tbsp2 Tbsp2 Tbsp Coconut Whipped Topping, So delicious brand
- 0.25 tsp0.25 tsp0.25 tsp Saffron
- 2 Tbsp2 Tbsp2 Tbsp Coconut Milk
- 1 Tbsp1 Tbsp1 Tbsp Pistachios, Roasted, chopped or any nuts
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all the ingredients under 'custard' to a small saucepan and place on low heat. Stir using a whisk for about 3 to 4 mins until the mixture thickens. Turn heat off and keep this aside.
- Next heat a stainless steel saute pan on heat and add half of the butter. When melted, place half of the bread pieces and shallow fry them for about 1 min on each side until golden brown. Flip and fry on the other side again till crisp and golden. Remove from pan and transfer to a serving tray. Repeat the same process for the rest of the bread pieces.
- Now to assemble the dessert, drizzle the fried bread slices generously with honey. Next pour the prepared custard over them and finally top with the whipped coconut cream.
- Drizzle the extra saffron infused coconut milk on top and top with crushed nuts.
- Cover the serving tray with plastic wrap and plae this tray in the refrigerator for at least a couple hours before serving!
