Shamrock Toddler Mini Muffins
These are also called dinosaur muffins in our house! Anything I can do to get my picky toddler to eat vegetables! How fun are these for St Patricks day! These would be the perfect breakfast treat or school lunch add in. We love these so much and they’re super healthy, and nutrient dense. Packed with protein, vegetables and healthy fats, there is not much more you could ask for!
Ingredients
- 2 cup2 cup2 cup Baby Spinach
- 2 whole2 whole2 whole Banana, Ripe
- 1 whole1 whole1 whole Egg
- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Pistachios, Raw
- 4 Tbsp4 Tbsp4 Tbsp Agave Nectar Syrup
- 1 cup1 cup1 cup All Purpose Flour - Thrive Market
- 0.5 cup0.5 cup0.5 cup Quick Cooking Oats
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Cinnamon, Ground
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 degrees. Line a mini muffin pan with cupcake liners. Set aside.
- In a blender, add the spinach, bananas, egg, cottage cheese, agave and pistachios. Blend until it becomes a smoothie like texture. Pour into a mixing bowl. The. Add your flour, oats, baking powder, and cinnamon. Mix until the batter is combined.
- Pour into the muffin tin. Place muffin tin in the oven and bake for 15-18 minutes. Be sure to check them because you don’t want to over bake!
- Let them enjoy!
Notes
This recipe can be made into regular size muffins if preferred. You can add chocolate chips or other desired add ins if you want!
