Sheperd’s Pie
SHEPERDS PIE is one of those dishes that we’re never NOT craving! The ingredients are simple and it’s so easy to make. This dish is typically made with lamb, but I like to use ground beef. I also make my own mashed potatoes but you can definitely use a prepackaged potato product. We like to enjoy with just a side salad!
Ingredients

- 10 oz10 oz10 oz Frozen Vegetables, Mirapoix (mix of diced onion, carrot, and celery) or cut fresh!

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Low Sodium Wheat-free Tamari, I use Gluten-free tamari!
- 1 cup1 cup1 cup Beef Broth, Low sodium
- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste
- 3 - 4 whole3 - 4 whole3 - 4 whole Russet Potatoes
- 0.25 cup0.25 cup0.25 cup Forager Project Dairy-Free Sour Cream Alternative
- 0.5 cup0.5 cup0.5 cup Cashew Milk
- 1 tsp1 tsp1 tsp Redmond Real Salt
- 1.5 tsp1.5 tsp1.5 tsp Chives, Fresh or dry
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 0.5 tsp0.5 tsp0.5 tsp Parsley, Fresh or dry

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Peel and cut potatoes into 3/4 inch cubes. Place the potatoes in a large pot. Cover the potatoes with water, bring the water to a boil and cook until they can be smashed with a potato masher or meat chopper, about 10-15 minutes.
- Add all ingredients to mashed potatoes and mix until the potatoes are smooth and creamy (should yield 3 cups of mashed potatoes). Set aside.
- In a medium pan, saute ground beef until browned. Add blend of onion, carrot, celery, and peas. Cook until onion becomes translucent.
- Add remaining ingredients and boil for 5 minutes. Continue stirring until mixture thickens, reduce to medium low heat for 15 minutes or until liquid has completely evaporated.
- Pour beef and vegetable mixture into a 2 quart (8 x 8) casserole dish. Let cool for 10 minutes.
- Scoop the potatoes on top of the ground beef filling. Carefully spread them into an even layer.
- Place in the oven and bake uncovered at 400 degrees for 20-25 minutes.
- Optional: sprinkle top with shredded cheddar cheese and broil for a few minutes.
Notes
1. You can use regular whole milk and regular sour cream! 2. You can assemble this meal the day before and leave in the fridge until you’re ready to cook for dinner!
