Shrimp Fajitas (Grain Free and Dairy Free)
These shrimp fajitas are my 'go to' meal for busy weeknights! I pre make my cassava tortillas and once I already have them on hand, making these shrimp fajitas are a breeze! You can also get Siete brand grain free cassava tortillas or Siete brand grain free almond flour tortillas!

Ingredients
- 18 whole18 whole18 whole Wild-Caught Raw Shrimp - US Wellness Meats, 18-20 if jumbo sized or more if smaller size

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Taco Seasoning - Primal Palate

- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 1 cup1 cup1 cup Organic Coconut Yogurt, Plain - Cocojune, or any non dairy yogurt
- .5 Tbsp.5 Tbsp.5 Tbsp Taco Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Lime Juice
- 0.5 cup0.5 cup0.5 cup Red Cabbage, shredded
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Rice Vinegar
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 1 cup1 cup1 cup Lettuce, Romaine, shredded
- 0.5 cup0.5 cup0.5 cup Red Onion, sliced
- 1 whole1 whole1 whole Avocado, sliced
- 1 whole1 whole1 whole Tomato, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Take the shrimp in a mixing bowl. Add the seasoning and the olive oil. Stir to mix and leave aside for 10-15 mins,
- Strain the coconut (or non dairy yogurt) using a fine mesh strainer (or a muslin cloth) for about 15 mins. Then add the strained yogurt to a bowl and add the seasoning mix and lime juice. Using a whisk, whip it to get a creamy consistency. Keep aside or in the refrigerator.
- Mix all the ingredients for the pickled cabbage in a small mixing bowl and keep aside for 10-15 mins.
- Heat a cast iron grill or a cast iron pan until hot. Then brush with a little bit of oil or butter. Place the shrimp and let cook on medium heat for 3 minutes. then flip them and cook for another 2 mins. Transfer to a dish. Repeat this process until all the shrimp are cooked.
- For serving the fajitas, lightly warm the tortillas and serve with the freshly grilled shrimp and the rest of the ingredients!
