Shrimp Salad (Edit recipe)

This is a very fresh tasting shrimp salad, not heavy/creamy. It's great served with toast points or as a sandwich, think "lobster roll" and serve it warmed if that sounds nice! It would also be wonderful on a bed of greens. For our lunch, we chose Against The Grain Dinner Rolls sliced in half as my mom is allergic to wheat and loves to eat with us! Their rolls are phenomenal if you're dealing with a wheat or gluten sensitivity or allergen.

To Cook The Shrimp

  • 1 lb Raw Shrimp, peeled and deveined
  • 1 bunch Parsley, fresh
  • 1 whole Lemon, sliced in half

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add your parsley bunch and lemon to a pot of water large enough to accommodate your shrimp. Simmer for 10 minutes WITHOUT shrimp.
  2. Get a nice slow rolling boil going and add your shrimp for 2 minutes, do not overcook shrimp.
  3. Immediately strain shrimp from water and run cold water over them to stop the cooking process. You will no longer need the parsley or lemon you used for the boil.
  4. Chop shrimp and add them to a mixing bowl with your remaining ingredients, gently folding it all together until mixed.
  5. Serve on toast points, a roll or over greens. We sliced the Against the Grain rolls in half while frozen and then placed them on the oven rack until warm at 350F, then topped with our shrimp salad. Enjoy!
