Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pat the shrimp dry. Sprinkle the shrimp with salt and pepper. Set aside.
  2. Place the olive oil and 1 tablespoon of the butter in a large skillet set over medium heat.
  3. Add the garlic and red pepper. Saute for 30 seconds until fragrant.
  4. Stir in the broth, preserved lemon, lemon zest, and lemon juice. Simmer for 1 minute.
  5. Add the shrimp in a single layer. Cook about 2 minutes per side until pink and just opaque.
  6. Take the skillet off the heat and add in the remaining 1 tablespoon of butter. Toss in the parsley and mint. Taste and adjust the seasonings. Serve.

Notes

Store in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet on the stove so the shrimp does not overcook. This recipe does not freeze well. Serve over your favorite noodle, rice, zucchini noodle, or any other base you prefer.
