Slow-Cooked Chicken Thighs with Apples & Dates

- Season the chicken: Pat the chicken thighs very dry with paper towels. Season both sides with the True Made Foods Rub and freshly ground black pepper.
- Brown the chicken: Heat the olive oil in a large Dutch oven or heavy-bottomed skillet with a lid over medium-high heat. Place the chicken thighs skin-side down and cook for 5–7 minutes, or until the skin is deeply golden and crisp. Turn and brown the other side for 2–3 minutes.
- Transfer the chicken to a plate and set aside.
- Build the braising base: Reduce the heat to medium. Add the sliced onion to the same Dutch oven and cook for 3–4 minutes, stirring occasionally. Add the garlic and cook for another 30–60 seconds. Pour in the chicken bone broth, scraping the bottom of the pot with a wooden spoon to loosen the browned bits. Add the dates and stir to combine.
- Begin braising: Return the chicken thighs to the pot, skin-side up. The broth should come about halfway up the chicken but should not cover the skin. Bring the liquid to a gentle simmer. Reduce the heat to low, cover, and gently braise for approximately 45 minutes. The liquid should maintain a gentle simmer rather than a rapid boil.
- Add the apples: After 45 minutes, carefully arrange the apple chunks around the chicken. Cover again and continue cooking for 20–30 minutes, or until the chicken is very tender and reaches at least 165°F in the thickest part. For especially tender chicken thighs, 175–185°F is ideal. The apples should be tender but still retain their shape.
- Finish the dish: Remove the lid during the final 5–10 minutes if the braising liquid needs to reduce slightly. Taste the sauce and add additional True Made Foods Rub or black pepper if needed. Transfer the chicken to a serving platter. Spoon the apples, dates, and onions around the chicken and drizzle some of the flavorful braising liquid over the top.

Apples: Granny Smith provides a lovely tart contrast to the dates, while Honeycrisp creates a sweeter, more autumnal flavor. Dates: Medjool dates work particularly well because they become soft and jammy during cooking and naturally sweeten the sauce. Seasoning: The turmeric-based True Made Foods Rub contains chili pepper, onion and garlic powder, turmeric, mustard seed, and sea salt. Because it already provides a balanced savory seasoning, additional cinnamon, cumin, coriander, or other spices aren't necessary. Slow cooker: Browning the chicken first is worth the extra step. It develops a deeper flavor and gives the finished dish a more appealing golden-brown appearance.
