- Cook the pasta. Bring a pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
- Sauté the aromatics. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3–4 minutes, until softened. Add the minced garlic and cook for another 30 seconds, until fragrant.
- Brown the lamb. Add the ground lamb to the skillet. Break it apart with a spoon and cook until browned and cooked through, about 6–8 minutes. Drain excess fat if needed. Season with salt and black pepper to taste.
- Add the BBQ sauce and broth. Stir in 1/3 cup of the BBQ sauce and the beef bone broth or stock. Mix well and simmer for 2–3 minutes, allowing the flavors to come together.
- Combine with pasta. Add the cooked, drained pasta to the skillet along with the remaining 1/3 cup BBQ sauce. Toss until the pasta is evenly coated and everything is heated through.
- Add the cheese. Sprinkle the shredded white cheddar and mozzarella evenly over the pasta. Cover the skillet with a lid and cook over low heat for 2–3 minutes, or until the cheese is melted and gooey.
- Garnish and serve. Remove the lid and drizzle with additional BBQ sauce, if desired. Finish with freshly chopped parsley and serve warm.
