this version? we’re taking it up a notch. turning it into a hearty, protein-packed slow cooker soup with kaizen’s lupin bean rice for extra fiber, richness, & staying power. minimal prep, ultra satisfying, & the definition of cold-weather comfort food.
Ingredients
- 0.5 lb0.5 lb0.5 lb Bacon

- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" cubes

- 2 Tbsp2 Tbsp2 Tbsp Organic Garden Ranch Seasoning Mix - Primal Palate

- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 6 cups6 cups6 cups Chicken Broth

- 8 oz8 oz8 oz Low Carb Pasta - Kaizen Foods, I used their low carb rice

- 8 oz8 oz8 oz Cream Cheese, Light
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 8 oz8 oz8 oz Cheddar Cheese, shredded + extra for topping

- Green Onion (Scallion), for garnishing

- in a skillet, cook bacon until crisp.
- remove from pan, then saute peppers & onions until tender
- transfer to a slow cooker, along with chicken, ranch seasoning, nutritional yeast, & broth.
- cook on high for 3-4 hours or low for 6-8 hours OR until the chicken is cooked through.
- with 20-30 minutes left, add rice or pasta.
- right before serving, mix in cream cheese, greek yogurt, & cheese.
- top with additional cheese + green onions or chives & enjoy!
