Soft, Gluten Free Blueberry Bagels
The softest, fluffiest texture bagels! These are dreamy right out the oven, but toast to the perfect crisp for piling on the toppings, too!
Ingredients
- 1 whole1 whole1 whole Banana, Small or half of large
- .5 cup.5 cup.5 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 cup1 cup1 cup Gluten Free Flour
- 2 tsp2 tsp2 tsp Baking Powder
- 1 pinch1 pinch1 pinch Sea Salt
- .25 cup.25 cup.25 cup Blueberries
- 1 whole1 whole1 whole Egg Whites, For egg wash*

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mash banana and mix wet ingredients together
- Mix dry ingredients togetherr, then combine with wet
- Fold in blueberries
- Dust a surface with more flour
- Divide dough in 4 and roll out dough into snakes, then shape into circle
- Place on parchment paper lined baking sheet
- Bake at 375 for 18-19min until tops are golden
- Slice and enjoy or toast halves
Notes
Can use egg or just egg white wash. Both will yield desired result, but note when I used a whole pasture raised egg I did get a yellow tint
