Sourdough Foccacia
Sourdough can be very daunting for some, including myself, but I wanted to find a way that even the beginners wouldn't find difficult. This sourdough focaccia checks all those boxes. Not only is it by far one of the easiest sourdough recipes, but also one of the most delicious.
Ingredients
- 0.5 cup0.5 cup0.5 cup Homemade Sourdough Starter, Discard also works.
- 2 cups2 cups2 cups Water, filtered (80F-85F)
- 2 tsp2 tsp2 tsp Salt
- 4 cups4 cups4 cups All Purpose Flour
- 2 sprig2 sprig2 sprig fresh Rosemary
- 4 Tbsp4 Tbsp4 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Salt

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start off by feeding starter with equal parts Starter/Discard + Flour + Water (80F-85F).
- Once starter peaks, it is ready for use.
- This can take 2-4 hours depending on the temperature of your kitchen.
- In a bowl, add your peaked starter, water and salt.
- Mix until all starter is mixed in and foamy.
- Add your flour and with your dough whisk or wooden spoon mix together until all combined.
- Now that your starter, water, salt and flour are combined, the Bulk Fermentation beings.
- Cover and let it relax for 30-45 mins.
- Perform your first and only round of stretch and folds, then cover and let dough double in size.
- From the time your ingredients were combined include that time into your bulk fermentation which can take around 5-6 hours or longer.
- Once bulk fermentation is complete, transfer your dough to a lined 9x13 without letting dough tare. This is where I use the coiling method.
- Once you place your dough into a lined tray, letter fold then flip over.
- Let it double in size about 2-4 hours.
- Once last rise is complete, add your oil, salt and rosemary, then dimple your dough.
- Bake at 425F for 25-30 mins.
- Sourdough takes time, but it will be worth it!
- Remember, its GUT HEALTHY
