Spiced Pear and Walnut Overnight Oats (Vegan)
These spiced pear and walnut overnight oats are cozy, crunchy, sweet, and full of protein and fiber. They begin with a simple mix of steel-cut oats, chia seeds, and unsweetened oat milk. Add in warm and fragrant nutmeg and cloves, tender bites of diced pear, and the crunch of chopped raw walnuts, and you’ve got a breakfast that’s comforting, earthy, and wonderfully satisfying.
Ingredients
- 4 Tbsp4 Tbsp4 Tbsp Oats, Steel Cut

- 1 Tbsp1 Tbsp1 Tbsp Chia Seeds
- 0.75 cup0.75 cup0.75 cup Oat Milk, Organic, (or plant based milk of your choice)

- 1 whole1 whole1 whole Pear, (I used one small Anjou pear)
- 2 Tbsp2 Tbsp2 Tbsp Walnuts, - raw
- .5 tsp.5 tsp.5 tsp Nutmeg, Ground
- .125 tsp.125 tsp.125 tsp Cloves, Ground

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using a 2-cup mason jar (or container of your choice) – add the steel cut oats, chia seeds and milk. Stir well, cover and place in the refrigerator overnight (8 to 10 hours).
- Core and dice the pear and roughly chop the walnuts.
- Remove the oats from the fridge and add the protein powder, diced pear pieces, chopped walnuts and the ground nutmeg and cloves (or add it all to a bowl) and enjoy!
- I make four servings at a time and store them in the fridge. The longer they sit, the chewier the oats become. They last up to five days, but less if you add fruit and toppings before refrigerating.
