Spinach Chocolate Chip Protein Muffins (Edit recipe)

Sure there are 47382 other spinach muffin recipes out there, but mine are beyond delicious while having extra protein and are lower in carbs. These taste just like a regular ol’ chocolate chip muffin, are super fluffy, and have several cups of spinach in it (that you can’t taste 💁🏻‍♀️) If you don't want to use protein powder, see the notes for substitutions. Grab your blender and get to making these!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Blend spinach and all wet ingredients together until smooth.
  2. Mix dry ingredients together in a bowl (except chocolate chips) and add the wet ingredients to the bowl.
  3. Once mixed, fold in the chocolate chips. Pour 3/4 of the way full into a greased or lined muffin tin. The batter will be thick.
  4. Bake at 350 for 15-20 min and let cool at least 10 min before removing.

Notes

If you're not using protein powder, you can use a total of 2 cups of oat flour but may need to add granulated sweetener of choice (about 1/4 cup) since the protein powder adds sweetness.
