Spinach Chocolate Chips Muffins
These green muffins are another EASY way to get in a veggie without tasting it AND they are nut free, gluten free, and a vegan snack you can prep for the week!
Ingredients
- 2 cup2 cup2 cup Spinach, 2-3 handfuls
- 0.666 cup0.666 cup0.666 cup unsweetened Applesauce
- 0.666 cup0.666 cup0.666 cup Milk
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 2 cups2 cups2 cups Oat Flour
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Baking Powder
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend the first 4 ingredients together until smooth. Mix dry ingredients together in a bowl (except chocolate chips) and add the wet ingredients to the bowl. Once mixed, fold in the chocolate chips. Pour 3/4 of the way full into a greased or lined muffin tin. The batter will be thick. Bake at 350 for 15-20 min and let cool at least 10 min before removing.
