Strawberry Shortcake Popsicles (Edit recipe)

Another ice cream truck favorite! But this version is gluten free, dairy free, refined sugar free, AND has an optional protein boost, too! I added my favorite strawberries n cream protein powder from Just Ingredients brand- clean ingredients and great taste. Code colleenF10 saves you site wide! THESE are the popsicle molds I used!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Blend all ingredients together until smooth
  2. Pour into 6 popsicle molds
  3. Freeze for 3-4 hours
  4. Lightly process freeze dried strawberries and vanilla cookies until crumbled
  5. Remove from freezer, run under hot water to loosen from molds, then roll in crumbled strawberry and cookie mix, pressing into the popsicles
  6. Enjoy right away or place back in the freezer in an airtight container

Notes

I used vanilla cookies from Made Good Foods. You can use golden Oreos or any other vanilla cookies you wish SUBSTITUTIONS: you can replace banana with more strawberries you can use heavy cream in place of coconut cream you can leave out the protein powder you can use any milk or even juice for the liquid you can use honey instead of syrup for your sweetener

    Hi! I’m trying to make these but I’m a little unsure about the coconut cream part. It says 1 whole can, but just the thick part? So it’s really not a whole can..? Confused
