Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Roast the delicata: Preheat oven to 400°F (205°C).
  2. Brush cut sides with olive oil, salt, and pepper.
  3. Place cut-side down on a parchment-lined sheet and roast for 25–30 min, until fork-tender and slightly caramelized.
  4. Make the filling
  5. In a skillet over medium heat, add a little oil and sauté onion until softened.
  6. Add garlic, cooking until fragrant.
  7. Add ground venison and cook until browned; season with thyme, rosemary, cinnamon, nutmeg, salt, and pepper.
  8. Stir in spinach until wilted.
  9. Mix in soaked goji berries
  10. Add a splash of maple to balance flavors.
  11. Taste + adjust seasonings.
  12. Flip the roasted squash halves upright.
  13. Stuff generously with the venison mixture.
  14. Return to the oven for 10 minutes to meld everything together.
  15. Drizzle with a little maple.
  16. Add herbs or pumpkin seeds for texture.
