Stuffed Dreidel Cookies

Ingredients
- 0.25 cup0.25 cup0.25 cup Coconut Oil
- 0.25 cup0.25 cup0.25 cup Maple Syrup, Pure
- 1.5 tsp1.5 tsp1.5 tsp Vanilla Extract
- 1.5 cup1.5 cup1.5 cup Almond Flour
- 0.5 cups0.5 cups0.5 cups Gluten Free Rolled Oats, Add to a blender to make oat flour
- 0.25 cup0.25 cup0.25 cup Cornstarch, Can also sub with tapioca or arrowroot starch
- 1 tsp1 tsp1 tsp Sea Salt
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 10 oz10 oz10 oz White Chocolate, Melt with 1 tsp coconut oil
- 1 cup1 cup1 cup Unreal Chocolate Gems

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix together your melted coconut oil, pure maple syrup, and vanilla extract.
- Pour in your almond flour, oat flour, cornstarch, salt, and baking powder.
- Mix until a dough forms.
- Put in the fridge or freezer for 30 min so it’s easier to work with the dough.
- Lay your dough on a silicone baking mat and roll out with a rolling pin until 1/4-inch thick. Using a dreidel cookie cutter, press down on the dough and carve out dreidel shapes. Place them on your parchment lined baking sheet and continue the process of rolling out your dough and cutting out dreidels until all the dough is used up. For half the cookies, use a smaller circle shaped cookie cutter to cut out a hole where the chocolate gems will go but wait to add them.
- Bake for 10-15 minutes or until your cookies are slightly golden. Set aside to cool.
- Once cooled, dip the cookies into melted white chocolate.
- Add a cookie with a hole on top of a whole cookie.
- Add chocolate gems to the center and pop in the fridge for 15 minutes for the chocolate to harden. Enjoy!
