Summer Bolognese (Edit recipe)

The garden is bursting with fresh herbs. Herbs are extremely healthy and bump up the flavor of any dish. Slow simmered with a rich tomato flavor this sauce is delicious. A classic dish that is dreamy and meaty, you will love it. I love recipes that have a ton of vegetables that increases the nutrient value. It is about 50% vegetables and 50% top quality ground beef that provides lots of great vitamins, minerals, and fats. This recipe has been lovingly created and I hope you and your family enjoy it as much as we do.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a Dutch oven cook the meat in 1 Tbsp oil on medium heat until done, chop up as it cooks.
  2. Add 1 Tbsp oil, then add the vegetables, salt, and pepper, stir and let cook 5 minutes.
  3. Add the milk and wine, let cook for 3-4 minutes.
  4. Add the tomato paste and crushed tomatoes, str.
  5. Reduce heat to low and cook for 2-3 hours, stir periodically.
  6. Add the herbs about 5 minutes before serving.

Notes

Cutting up the vegetables into a very small dice helps the end result be creamy. I aim for a size that is smaller than a pea. The Parmesan rind adds an amazing cheesy salty flavor. If you don’t have a rind to use then plan to add a bit more fresh  grated Parmesan when serving. I use Jovial gluten free pasta then top with grated Parmesan cheese. Any pasta works fabulously. You can freeze this bolognese for up to one month.
