Sweet Chili Chicken and Noodles (Edit recipe)

If you follow me you know I love chicken and vegetables. But this dish uses rice noodles with a zesty sauce to take it to the next level. Sweet and a bit spicy. This is a different version of sweet chili chicken. Hope you enjoy.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large skillet add oil and chicken. Cook on medium for about 8 minutes, stir periodically.
  2. Add in all the vegetables, not the cilantro. Stir and let cook for 5 minutes.
  3. In a large pot cook the rice noodles per package instructions.
  4. As the chicken and vegetables continue to cook prepare the sauce.
  5. Put all sauce ingredients into a Mason jar with lid. Shake vigorously to blend up.
  6. Pour sauce over chicken and vegetables. Stir and let warm through for a minute.
  7. Using a large straining spoon let noodles drain and add them to the chicken and vegetables.
  8. Carefully stir around.
  9. Serve and add cilantro on top.

Notes

If you don’t like cilantro leave it off. My husband hates cilantro so he leaves it off his. I used pho rice noodles for this but any will work.
