This is such a delicious dinner recipe and it’s so easy to make! It’s very healthy and is nourishing. I made it for a mom who had just given birth to her second baby! Its the perfect meal to feed at a party or to drop off to a family!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat a saucepan over medium heat.
  2. If you haven’t already, cook the sweet potatoes so that they are mashed.
  3. Chop the bell pepper, onion, carrots and green beans. Add to pan with olive oil. Let it simmer for roughly 3-5 minutes. Then add ground beef. Add all seasonings. Cook until the ground beef is cooked all the way through and the vegetables are tender. Add beef broth and simmer on low for about 5 minutes.
  4. Pour into a Pyrex dish, a 9x9 works. Then add the mashed sweet potatoes on top.
  5. If serving for dinner, preheat oven to 350 and bake for 25-30 minutes. If you’re bringing it to a friend, have them bake it when ready to eat!
