- 2 cloves2 cloves2 cloves Garlic, finely minced

- 1 tsp1 tsp1 tsp Ginger Root, minced

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 pinch1 pinch1 pinch Red Pepper Flakes, optional

- 1 sprig1 sprig1 sprig Green Onion (Scallion), chopped *optional

- Preheat the oven to 400ºF and place the chicken, pineapple tidbits, and bell peppers in a 9x13 inch baking dish.
- In a small mixing bowl, combine the pineapple juice, ketchup, brown sugar, garlic, and ginger and whisk together. Season with salt and pepper to taste.
- Pour over the chicken breasts and bake for 15 minutes, flip the chicken, and bake for another 10-15 minutes or until fully cooked through.

Notes
