Sweet Summer Cherry Syrup (Edit recipe)

What is summer without cherries?! For example, my new Cherry Limeade Fruit Crisp--so delicious! With this syrup, can you even imagine all the possibilities?! I enjoy making my own syrups and made a scrumptious Hibiscus Syrup a couple years ago, sweetened with only honey and it's a winner! You can make this syrup with all honey, it's up to you on that, depending on your needs.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add cherries (stems and all) water, sugar, honey and salt to a large saucepan, stirring to incorporate the honey, sugar and water.
  2. Bring it up to a slow simmer over medium heat, using a large spoon or spatula to carefully burst the cherries as they begin to swell. They can pop and cast hot liquid your way, so do this carefully and wear an apron!
  3. Reduce heat to low and allow to simmer, continuing to burst the cherries to release the seeds/stems. You're wanting to reduce this all down by about half, so keep an eye on it and let it do its thing and reduce to become a lovely, burgundy syrup.
  4. While that simmers away, place a large fine mesh strainer over a heat proof container. When you're ready, carefully pour this hot mixture through the strainer and press the fruit to release as much of the syrup as possible into the container. Discard stems and seeds--easy peasy!
  5. Once it has cooled a bit, pour into a glass jar with a lid and store in your refrigerator. Use on all the things! You should have approximately 2 cups!

Notes

Depending on how sweet your cherries are you may not need the addition of honey, so taste those cherries first and decide what works for you. You can absolutely make this with frozen cherries as well!
