- Bring a pot of salted water to a boil. Add the lobster tails and cook for about 3 minutes, just until they're slightly undercooked. Transfer them to an ice bath, then remove the meat from the shells and give it a rough chop.
- Preheat your oven to 325°F.
- Slice the tops of the King's Hawaiian rolls without cutting all the way through. Melt 1 tablespoon of butter and brush it over the rolls. Sprinkle with Everything Bagel Seasoning if you're using it, then bake for 4 to 5 minutes until lightly toasted.
- While the rolls are in the oven, melt the remaining 3 tablespoons of butter in a skillet. Add the lobster and fresh tarragon and cook for about 3 minutes, just until the lobster is cooked through and coated in that buttery goodness.
- Whisk together the mayonnaise, garlic, lemon juice, and white miso paste until smooth.
- Pile the warm lobster into the toasted rolls, drizzle with the miso aioli, and top with a few microgreens if you'd like.
Notes
You can substitute one whole lobster for the two tails. Just adjust the cooking time based on the size of the lobster. The meat should be just slightly undercooked, as it will finish cooking in the tarragon butter.
