The Best Roast Turkey Breast
Turkey isn’t just for the holidays! I love roasting a turkey breast at the start of the week—perfect for Sunday dinner, then sliced up for easy lunches all week. Sandwiches, wraps, salads… so many possibilities. I add celery, carrots, and onions to the roasting pan (and some inside the turkey cavity) for extra moisture and flavor. Brush with melted butter, season with a generous amount of salt & pepper, fresh thyme, roast and enjoy!
Ingredients
- 6 lb6 lb6 lb Turkey Breast
- 1 whole1 whole1 whole Onion, Sliced
- 4 whole4 whole4 whole Celery, Stalks, sliced in half
- 4 whole4 whole4 whole Carrots, Peeled, Sliced in large pieces
- 2 tsp2 tsp2 tsp Sea Salt
- 2 tsp2 tsp2 tsp Black Peppercorns, Ground Fresh
- 1 tsp1 tsp1 tsp Thyme, Fresh
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees F.
- Pat dry the turkey breast inside and out.
- Lay out the cut vegetables in a roasting pan.
- Place the the turkey breast on top of the vegetables. Brush liberally with melted butter. Sprinkle with salt and cracked black pepper. (Note you can place some veggies in the cavity of the turkey as well for extra flavor and moisture).
- Roast the turkey breast and vegetables uncovered for 20 minutes. After the 20 minutes, turn the heat down to 350 degrees F and continue to cook until browned and the juices run clear, and internal temperature is 155 degrees F. About 1 1/2 hours for 6 lb breast.
- Remove from the oven and tent with foil, letting it rest at least 20 minutes.
- Carve and serve along with the vegetables. Drizzle with the juices from the pan (or make a gravy).
