Tzatziki Recipe

Ingredients
- 2 cups2 cups2 cups Plain Greek Yogurt
- 1 whole1 whole1 whole Lemon, Zest + juice
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 clove1 clove1 clove Garlic, Minced
- 1 whole1 whole1 whole Persian Cucumber, Or 1/4 English Cucumber
- 1 tsp1 tsp1 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Strain yogurt with a cheese cloth, or in a coffee filter over a soft as seen in the video.
- In a bowl, mince garlic and add lemon juice just to mellow the pungent flavour for 15-20 mins.
- With a box grater, grate cucumber, then add salt to draw out the moisture.
- Squeeze excess water from cucumber.
- To your mixing bowl, add your strained yogurt, cucumber, olive oil, lemon zest, lemon juice & seasoning.
- Once garlic has mellowed out.
- Discard the juice from the garlic, then place garlic into yogurt mixture.
- Mix until combined, then refrigerate for a minimum 2-3 hours.
- Refrigerating is optional, but highly recommended.
- Garnish with more olive oil, olives and herbs.
- Serve with pita or use as a sauce on your favourite Greek sandwich and enjoy!
