- In a small mason jar, combine the olive oil, lemon juice, minced garlic, and Super Gyro Seasoning. Seal the lid, and shake to combine.
- Place the chicken thighs in a bag to marinate, and pour the marinade over the chicken. Add the lemon peel to the bag if desired for more aromatics.
- Seal the bag, and place in the fridge to marinate for 4 hours.
- While the chicken is marinating, prepare the Tzatziki by mixing together the yogurt, cucumber, garlic, lemon juice, salt, pepper, and fresh dill.
- Cover the Tzatziki, and place in the fridge until serving.
- Heat your grill to medium high heat. Place the chicken on a well oiled or well seasoned part of the grill. Cook for 4-6 minutes on the first side, carefully release and flip. Cook for a total of approx 15-20 minutes, or until cooked through (measures 165F).
- Allow the chicken to rest for 5 minutes, then slice.
- Warm the cassava tortillas over a gas flame or in a large pan. Add the chicken, chopped lettuce, sliced tomato, red onion, and tzatziki.
