Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small mason jar, combine the olive oil, lemon juice, minced garlic, and Super Gyro Seasoning. Seal the lid, and shake to combine.
  2. Place the chicken thighs in a bag to marinate, and pour the marinade over the chicken. Add the lemon peel to the bag if desired for more aromatics.
  3. Seal the bag, and place in the fridge to marinate for 4 hours.
  4. While the chicken is marinating, prepare the Tzatziki by mixing together the yogurt, cucumber, garlic, lemon juice, salt, pepper, and fresh dill.
  5. Cover the Tzatziki, and place in the fridge until serving.
  6. Heat your grill to medium high heat. Place the chicken on a well oiled or well seasoned part of the grill. Cook for 4-6 minutes on the first side, carefully release and flip. Cook for a total of approx 15-20 minutes, or until cooked through (measures 165F).
  7. Allow the chicken to rest for 5 minutes, then slice.
  8. Warm the cassava tortillas over a gas flame or in a large pan. Add the chicken, chopped lettuce, sliced tomato, red onion, and tzatziki.
  9. Serve!
