Unstuffed Pepper Casserole
If you’re looking for an easy one pot meal, look no further. This “unstuffed” pepper casserole features the usual suspects you’d find in a stuffed pepper recipe but we are just chopping everything up and adding to a pot.
Ingredients
- 1 whole1 whole1 whole Red Bell Pepper, Chopped
- 0.5 cup0.5 cup0.5 cup Jasmine Rice
- 1 cup1 cup1 cup Water, or veggie broth
- 14.5 oz14.5 oz14.5 oz Diced Tomatoes
- 14.5 oz14.5 oz14.5 oz Fire Roasted Diced Tomatoes
- 1 whole1 whole1 whole Green Bell Peppers, chopped
- 8 oz8 oz8 oz Tomato Sauce
- 1 tsp1 tsp1 tsp Ground Cumin
- 0.5 tsp0.5 tsp0.5 tsp dried Oregano
- 1 tsp1 tsp1 tsp Paprika
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 1 tsp1 tsp1 tsp Garlic Powder
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 1.25 cup1.25 cup1.25 cup Sharp Cheddar Cheese
- 3 cup3 cup3 cup Baby Spinach
- 1 lb1 lb1 lb Ground Beef, or vegan substitute
- 1 cup1 cup1 cup Black Beans

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add some avocado or olive oil in your large pot and cook onion and meat. Add the rest of the ingredients and boil. Lower heat to medium low, lover and cook 30 min (stirring half way to make sure the food doesn’t stick to the bottom of the pot) and adjust seasoning if necessary. Turn off heat and stir in cheese until melted.
