Unstuffed Pepper Skillet

Ingredients
- 1 lb1 lb1 lb Ground Bison
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Yellow Onion, diced
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 pieces1 pieces1 pieces Ginger Root, peeled, finely chopped
- 1 whole1 whole1 whole Bell Pepper, any color
- 1 whole1 whole1 whole Fire-Roasted, Muir Glen brand Diced Tomatoes, 1 can
- 2 Tbsp2 Tbsp2 Tbsp Unsweetened Ketchup - Primal Kitchen
- 1 - 2 cups1 - 2 cups1 - 2 cups Rainbow Chard, spinach/kale work well here too
- 2 - 4 cups2 - 4 cups2 - 4 cups Frozen Cauliflower Rice, 1 bag
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning
- 1 tsp1 tsp1 tsp Ground Cumin
- 1 tsp1 tsp1 tsp Paprika
- 1 pinch1 pinch1 pinch Salt and Pepper

- Heat olive oil in a large skillet over medium heat. Add ground bison and cook until browned, breaking it up into crumbles as it cooks. Remove the bison and set aside.
- In the same skillet, add onion and garlic. Sauté until fragrant and the onion is translucent, about 2-3 minutes. Add in ginger
- Toss in the diced bell peppers and cook until softened, about 5 minutes.
- Return the bison to the skillet, then stir in the diced tomatoes, spinach, cauliflower rice, and seasonings
- Let the mixture simmer for 5-7 minutes, stirring occasionally, until heated through and flavors meld together.
- Serve with avocado/salsa/ or as is and enjoy!
