Yummy Sweet Potato Toast
These air fried sweet potato toasts are quick and healthy. It is very versatile and can be served with desired toppings.
Ingredients
- 222 large Bok Choy, purple, sweet potatoes (easy to make into toasts)
- Salt, to taste
- Black Pepper, to taste
- .5 tsp.5 tsp.5 tsp Turmeric
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using a sharp knife or a mandolin slicer, slice the purple sweet potato lengthwise to make thin, 1/3 inch thick slices.
- Season the slices with olive oil, salt, pepper and turmeric.
- Set the temperature in air fryer to 350 F and the timer to 10 minutes.
- Air fry the sweet potatoes.
- Let the sweet potatoes cool on a wire rack.
- Enjoy with desired toppings
Notes
For this recipe, I used 3 types of sweet potatoes and found that purple, sweet potatoes came out the best. You can also bake the purple sweet potatoes in the conventional oven for around 20 minutes till it is tender, although I prefer the air fried sweet potatoes. The toast can be made sweet or savory by the addition of desired toppings. You can use the left over part of the sweet potato in other dishes. I make curries out of this.
