Gluten Free Caprese Garlic Bread (Edit recipe)

It's that time of year when all the tomatoes are starting to ripen on the vine, so it's a perfect time to make this! You may even have some fresh basil growing in your garden as well!! It uses the GLUTEN FREE FRENCH BREAD recipe as the base and comes together in minutes. It's easily one of the most desirable appetizers you will find yourself bringing to all the neighborhood or family BBQ's this summer. Plan on taking home an empty serving platter, you will NOT have any leftovers!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Slice one loaf in half horizontally.
  2. Put each half on a baking sheet and place in the oven under the broiler. Broil until golden brown.
  3. Remove from the oven and leave halves on the baking sheet. Carefully scrape/rub garlic clove over the golden crust of each half. Don’t press too hard or you’ll end up pushing the garlic clove into the bread. You want just enough pressure so that the crust of the bread acts like sandpaper and imparts the garlic into the bread.
  4. Once garlic has been rubbed onto each half, sprinkle each half with the Herb Garden Seasoning.
  5. Lay mozzarella slices, overlapping slightly, down the length of each half of the garlic bread. Place back in the oven under the broiler until the cheese is bubbly and melted. If you like a bit of color on cheese, go for it. Don’t walk away from the oven at this point, that cheese can go from “perfect to oops” very quickly under the broiler.
  6. Remove from the oven and place halves on a serving platter. Lay tomato slices, overlapping slightly, on top of cheese, sprinkle with basil and drizzle on the balsamic glaze. If using black pepper, sprinkle on top.
  7. Slice and serve.

Notes

Note: Costco sells the pre sliced mozzarella cheese, making the prep for this even easier. If you need to make this dairy free, there are some really great vegan and/or dairy free cheese on the market. Be sure to check out your local market. // To make this on the grill, turn halves upside down on the grill and allow to toast like you would with the broiler. Once toasted, assemble as directed then place halves, cheese side up (on a baking sheet or foil), on the grill and cover/close lid until cheese is melted to desired preference. Remove and finish assembling as directed.
