I thought this was a very fun and easy way to enjoy eggplant from our garden! The process is similar to making chicken cutlets if you've ever done so before. Enjoy my easy eggplant fired bites with a side of hot honey. This is a crowd pleaser for sure that will leave you wanting more.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pour oil into a pot or pan for frying and allow to reach a temperature of 350F degrees
  2. Wash, peel, cub your eggplants and set aside in a bowl
  3. In another bowl, crack and beat eggs, set aside
  4. In the last bowl, add your parmesan cheese, bread crumbs, panko bread crumbs, and seasonings; mix well and set aside
  5. Begin by coating your eggplants in flour, then egg, and finally bread crumb mixture
  6. Once the oil is hot enough, slowly place your eggplant into the oil
  7. Remove from oil when the eggplants turn golden brown
  8. Put aside onto a cooling wrack or plate with papper towel to soak up excess oil
  9. Repeat process until no eggplant is left
  10. Serve with extra salt and pepper to taste and dunk into your hot honey!
