My family loves the flavors of Greek food, especially the traditional gyros. But like so many yummy foods they are wrapped in a pita, made from wheat. This version uses butter lettuce and is oh so yummy. You can make these AIP if you swap out the greek yogurt and use coconut yogurt.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Wash butter lettuce and set on clean kitchen towel to dry.
  2. For dressing blend everything together in a small bowl.
  3. In a skillet cook the lamb in oil on medium until done.
  4. Add onion, celery, salt, and oregano then stir and cook for 3-4 minutes.
  5. Add zucchini and garlic stir and cook for 3-4 minutes.
  6. Squeeze fresh lemon juice on top of meat just before serving.
  7. Spoon meat into two lettuce leaves and top with tzatziki.
