Oatmeal Coconut Breakfast Cookies
These oatmeal coconut chocolate chip beauties were supposed to be no bake bars, but wound up being THE BEST breakfast cookies instead.
With wholesome ingredients you probably have at home, you will not want to skip over these and you also will want one every day 😋
I’m calling them breakfast cookies because they don’t have a cookie dough texture and the base is mostly oats. Plus, with these clean ingredients they are a fun breakfast companion 🥰
Ingredients
- 1 cup1 cup1 cup One Degree Organic Oats
- 0.25 cup0.25 cup0.25 cup unsweetened Coconut Flakes
- 0.333 cup0.333 cup0.333 cup Unsweetened Cashew Butter, + 1 TBSP (can also sub for another nut butter)
- 1 Tbsp1 Tbsp1 Tbsp Honey, Can sub maple syrup
- 2 Tbsp2 Tbsp2 Tbsp Water
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
- 0.25 tsp0.25 tsp0.25 tsp Baking Soda
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips

- Mix everything in a bowl and fold in chocolate chips.
- Scoop onto a parchment lined baking sheet and form into cookie shapes with your hands and flatten (these won’t spread).
- Bake at 325 for 10 min (the edges should be a nice golden brown) and let sit for at least 15 min to firm up before eating.
