Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350ºF.
  2. Line a baking tray with parchment paper and set aside.
  3. In a small bowl, create your flax egg by combining 2 tbsp flax seeds and 6 tbsp water. Let set for 5 minutes.
  4. In a medium-sized bowl, add your flax eggs, maple syrup, applesauce, and vanilla extract and whisk together.
  5. Next, add in flour, oats, and baking powder and whisk until well combined.
  6. Add in chopped apples and chocolate chips and mix with a spatula.
  7. Using a cookie scooper, scoop your cookie dough onto your baking tray.
  8. Place pan in the oven and let cook for 15 minutes. Let cool for 10 minutes before enjoying.

How to store: Place in the fridge for up to one week. These cookies can also be kept in the freezer for up to one month.
