My twist on the classic tuna-melt with this quick & easy quesadilla! Perfect for a quick lunch or protein packed dinner. Feel free to customize it with your favorite tuna salad ingredients & toppings. Provecho amigos!

  1. 1. In a mixing bowl, combine the tuna, diced onion, chopped dill, mayo, mustard, salt, pepper, and optional elote seasoning. Mix well until all ingredients are evenly incorporated.
  2. 2. Heat a non-stick skillet over medium heat.
  3. 3.Place a grain-free tortilla in the skillet and sprinkle some cheese over half of it. Cook for 2-3 minutes on each side, or until the tortilla is crispy and golden brown, and the cheese is melted.
