Protein Cookie Dough Ice Cream Sandwiches (grain-free/vegan)
Meet your new favorite summer treat! These Cookie Dough Ice Cream Sandwiches are made with a simple no bake cookie dough that is grain-free, vegan and protein packed, then topped with the ice cream of your choice. No baking required!
Ingredients
- 1.5 cup1.5 cup1.5 cup Almond Flour
- 0.5 cup0.5 cup0.5 cup Pea Protein Powder (unflavored), I used vanilla
- 0.5 cup0.5 cup0.5 cup Cashew Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup, less, depending on your protein powder
- 2 tsp2 tsp2 tsp Coconut Oil, optional
- 0.25 cup0.25 cup0.25 cup Semi-Sweet Mini Chocolate Chips, use dairy-free, for vegan
- 2 cup2 cup2 cup Vanilla Ice Cream, use dairy-free, for vegan

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine almond flour, protein powder, cashew butter, maple syrup and coconut oil in a bowl.
- Stir in chocolate chips.
- Roll dough out into a rectangle and place on a lined baking sheet.
- Freeze for 30 minutes.
- Slice dough in half.
- Spread vanilla ice cream on one half of the cookie dough.
- Top with other cookie dough half and press down firmly.
- Freeze for two hours before slicing into squares.
Notes
The amount of maple syrup needed with depend on how sweet the protein powder is that you use! The coconut oil isn't essential, however it does help the cookie dough to hold it's shape better. Use the ice cream of your choice!
