Peanut Butter Vanilla Protein Cookies
Adding to my long list of cottage cheese protein cookies with this fun flavor - Vanilla Peanut Butter!
You cannot taste cottage cheese, and these are softer than a typical cookie but they are delicious and packed with protein.

Ingredients
- 2 cup2 cup2 cup Low-Fat Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Peanut Butter
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 0.5 cup0.5 cup0.5 cup Coconut Flour
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder (Nuzest), + 2 TBS
- 0.25 cup0.25 cup0.25 cup Pascha 85% Organic Vegan Extra Bitter-Sweet Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend the wet ingredients together until smooth.
- Add to a bowl with the dry ingredients and mix until combined.
- Fold in chocolate chips.
- With a cookie scoop, scoop onto parchment lined baking sheet. This will spread, so no need to flatten them out.
- Bake at 350 for 18-20 min. Let cool for at least 15 minutes before eating (they will firm as they cool).
