Dairy-Free Creamy Smoked Salmon and Cucumber Salad
One of my favorite meals of all time is a toasted everything bagel with cream cheese, lox, red onion, and tomato. I decided to make it into a salad, using Kite Hill cream cheese style spread so that is it dairy free. This salad is so delicious! Crunchy from the cucumber, smoky, salty, and creamy. It is so delicious, you will have this salad on repeat!
Ingredients
- 2 cups2 cups2 cups English Cucumber, thinly sliced
- 2 Tbsp2 Tbsp2 Tbsp Red Onion, thinly sliced
- 8 oz8 oz8 oz Smoked Salmon, chopped
- 4 oz4 oz4 oz Kite Hill Chive Spread (Cream Cheese-style spread)
- 1 tsp1 tsp1 tsp Sesame Seeds
- 1/2 tsp1/2 tsp1/2 tsp Poppy Seeds
- 1/4 tsp1/4 tsp1/4 tsp Black Pepper
- 1/4 tsp1/4 tsp1/4 tsp Primal Palate Kosher Flake Salt
- 111 Avocado, chopped
- 1/2 cup1/2 cup1/2 cup Grape Tomatoes, sliced

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Rinse the cucumber, thinly slice, and place in a bowl or container with a lid.
- Add in the sliced red onion, chopped smoked salmon, and chive cream cheese style spread, sesame seeds, poppy seeds, black pepper, and kosher salt.
- Put the lid on the container, and shake until the "cream cheese" is evenly coated on the other ingredients.
- Stir in the chopped avocado, and sliced grape tomatoes. Put the lid back on, and give the salad another shake to make sure all is combined well.
- Serve and enjoy!

This looks like a quick-and-easy Whole30 meal that would be a great for lunch on the run. I’ll certainly be adding this to my rotation.
