Gluten Free Double Chocolate Muffins

Ingredients
- 0.25 cup0.25 cup0.25 cup Extra Bitter-Sweet Dark Chocolate Chunks (Bulk) - Pascha
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Ghee
- 1 whole1 whole1 whole Egg
- 1 whole1 whole1 whole Egg Yolk
- 1 Tbsp1 Tbsp1 Tbsp Maple Syrup, Pure
- 0.5 cup0.5 cup0.5 cup Almond Flour
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder
- 1 tsp1 tsp1 tsp Espresso Powder
- 1 pinch1 pinch1 pinch Baking Soda

- ✨Preheat the oven to 350 F line a muffin tin with 4-5 muffin liners. Spray with avocado oil spray.
- ✨Combine the chocolate and ghee in a glass bowl. Melt over a double boiler, or in 20 seconds intervals in the microwave, stirring until melted. Allow to cool for 5 minutes.
- ✨Add the egg and egg yolks and whisk well. Add the vanilla, coconut sugar, and maple syrup and whisk well.
- ✨ Add the dry ingredients and stir well to combine. Fold in extra chocolate chips.
- ✨ Scoop the batter into the muffin tin and top with extra chocolate. ✨Transfer to the oven and bake for 20-25 minutes or until baked through. Add flakey salt and allow to cool for a bit before enjoying!!
