Healthy Blueberry Banana Bread
One day I randomly got a craving for blueberry banana bread, and I haven't been able to move on since. Why? I'm not sure, but I have to say I'm proud of the execution! Bake this easy, nutritious bread up until the top is golden brown, and allow to cool completely before slicing. I love this served as is, with a little butter, nut butter, you name it. Pair with a cup of coffee, and you'll thank međŸ˜˜.
Ingredients
- 3 whole3 whole3 whole Banana, ripe
- 333 Eggs
- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 cups2 cups2 cups Almond Flour

- 1 tsp1 tsp1 tsp Cinnamon, Ground

- 1 tsp1 tsp1 tsp Baking Powder

- 0.25 tsp0.25 tsp0.25 tsp Salt

- 0.75 cup0.75 cup0.75 cup Blueberries, plus more for topping

- Preheat oven to 350 degrees. Line a baking tin with parchment paper and lightly grease. Set aside.
- To a large mixing bowl, add bananas, using two forks to mash completely. Add eggs, maple syrup, and vanilla. Whisk to incorporate.
- Add almond flour, cinnamon, baking powder, and salt. Mix to create a well-combined batter.
- Add in blueberries, and mix to incorporate.
- Pour into prepared pan, smoothing into an even layer. Top with additional blueberries.
- Bake for ~60 minutes. Option to cover with foil for the last 20-30 minutes if the top is browning too quickly.
- Allow to cool completely before slicing. Enjoy!
