Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 180°C/350°F. Grease & line a loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat butter and brown sugar until creamy. Add eggs one at a time, then mix in yogurt, mashed bananas, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Pour batter into the pan and bake for 60-65 minutes.
  6. Cool in the pan for 1 hour, then transfer to a wire rack to cool completely.
  7. Cover and store for 2 days at room temperature, or 1 week in the fridge. Enjoy!
