Inside out sausage with sauerkraut
I love easy make ahead meals that can be heated up fast. This inside out sausage can be made into sausages or served as is. The protein and carbs of the sausage are great for satisfying your hunger, the veggies give you fibre and the sauerkraut are added fibre and probiotics to boost your immune system. Make this at the beginning of the week and have a quick weekday dinner or I even eat it for breakfast! I often add a fresh avocado with this for added healthy fat. (not in picture)
Ingredients
- 2 lb2 lb2 lb Ground Pork, or beef, chicken or turkey
- 4 pieces4 pieces4 pieces Celery, diced
- 444 Carrots, shredded
- 111 Onion, diced
- 1 tsp1 tsp1 tsp Fennel, ground with mortal and pestle
- 1 tsp1 tsp1 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a skillet over medium heat, add ground meat and cook until no longer pink.
- Add onions, carrots and celery and spices and simmer until veggies are cooked all the way through.
- Serve with fresh raw sauerkraut and avocado.
