Gluten free, refined sugar free, soft and sweet strawberry pop-tart cookies! Can easily be made with cherry, blueberry, or any of your favorite pop tart flavors.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Make cookie dough whisk dry ingredients together in one bowl
  2. Use a hand mixer to whip honey and softened butter together, then add add and vanilla and whip again
  3. Add in dry ingredients with a wooden spoon
  4. Wrap the dough in plastic wrap in a disc shape and refrigerate for an hour
  5. Use 2 circular cookie cutters, one slightly larger than the other, to create cookie shapes, re-gather and roll the dough until all dough is used
  6. Place the smaller cookies on a baking sheet, and place one tbsp of jam in the center of the cookies
  7. Place the larger cookie overtop and seal the edges with your fingers
  8. Bake at 350 for 11-12 min. After 5 min move to a cooling rack to continue cooling & crisp up a bit
  9. Make icing by whisking powdered sugar and milk of choice together until desired consistency and use natural sprinkles on top (go super natural brand pictured)
  10. Spread overtop cooled cookies and allow icing to set
  11. Enjoy!
