Giant Raspberry Pop Tart
This giant pop tart is so fun! The dough is made with greek yogurt to add more protein and the filling is made with a chia seed jam to add more fiber. I hope you love it!
Ingredients

- .25 cup.25 cup.25 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Chia Seeds
- 1 pinch1 pinch1 pinch Sea Salt
dough
- 2 cups2 cups2 cups All Purpose Flour, sifted
- 1.25 cups1.25 cups1.25 cups Plain Greek Yogurt
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 1.5 tsp1.5 tsp1.5 tsp Baking Powder
frosting
- .333 cup.333 cup.333 cup Plain Greek Yogurt
- .25 cup.25 cup.25 cup Powdered Sugar

- For the Chia Jam:
- In a large pot, combine frozen raspberries, maple syrup, chia seeds, and a pinch of salt
- Bring to a boil, then reduce heat and let simmer for about 10 minutes, stirring occasionally, until thickened
- Mash the remaining raspberries with a potato masher
- Transfer to a container and refrigerate until cooled
- For the Dough:
- Preheat the oven to 350°F (175°C)
- In a mixing bowl, whisk together flour, sea salt, and baking powder
- Add Greek yogurt and gently mix until a dough forms—avoid overmixing
- Transfer the dough to a floured surface, shape it into a ball, and cut it in half
- Roll each half into a thin rectangular sheet
- Assembling the Pop Tart:
- Place one sheet of dough onto a lined baking sheet
- Spread ¼ to ⅓ cup of the chia jam evenly over the dough, leaving a ¼-inch border around the edges
- Lay the second sheet of dough over the top, then press down around the edges with a fork to seal
- Bake for 20-22 minutes, or until golden brown
- For the Frosting:
- Mix Greek yogurt with powdered sugar until smooth
- Once the pop tart has cooled slightly, spread the frosting evenly over the top
- Sprinkle with crushed dehydrated raspberries or sprinkles for a fun finishing touch
