  1. Heat 1 tablespoon olive oil in a large, deep pan and cook the onion for 4-5 minutes until translucent.

  4. Add the mushrooms and zucchini, cover with a lid and cook for 15 minutes or until tender.
  5. Stir in the diced tofu and fresh cilantro, season to taste and serve over rice, greens or as is!
