- 1 cup1 cup1 cup Coconut Milk
- 1 whole1 whole1 whole Yellow Onion, finely chopped
- 2 cloves2 cloves2 cloves Garlic, minced
- 2 Tbsp2 Tbsp2 Tbsp Ginger Root
- 1 cup1 cup1 cup Fire Roasted Diced Tomatoes
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Curry Powder
- 1 Tbsp1 Tbsp1 Tbsp Cumin, Ground
- 1 tsp1 tsp1 tsp Turmeric
- 0.5 tsp0.5 tsp0.5 tsp Smoked Paprika
- .5 tsp.5 tsp.5 tsp Chili Powder
- 1 pinch1 pinch1 pinch Salt and Pepper
- .5 cup.5 cup.5 cup Cilantro, finely chopped

- Simmer for another 5 minutes to let the flavors combine.
- Taste and adjust seasoning with salt and pepper as needed.
- Garnish with fresh cilantro and serve over rice, quinoa, or enjoy on its own for a low-carb option.
