Sesame Balls (Til Ladoos) Or Sesame Brittle (Til Chikkis)
January 14th is Sankrant or Makara Sankranti , which is one of the most auspicious festivals for Hindus, and is celebrated in almost all parts of India and also in Nepal and SriLanka with great fervour and festivities. Sesame and Jaggery balls are the highlight of this day as they are made and shared with friends and family.
Ingredients
- 1.25 cup1.25 cup1.25 cup Sesame Seeds
- 0.25 cup0.25 cup0.25 cup Cashews, Raw, chopped
- 0.75 cup0.75 cup0.75 cup Coconut Sugar, You can also use jaggery if available
- 0.25 cup0.25 cup0.25 cup Honey
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Cardamom, Ground, optional
- 0.125 tsp0.125 tsp0.125 tsp Baking Soda
- 1 Tbsp1 Tbsp1 Tbsp Butter, Unsalted - Kerrygold
- 2 Tbsp2 Tbsp2 Tbsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Take a stainless steel saute pan and heat it. Add the sesame seeds and the cashew pieces to it and dry roast on low heat for about 3 mins. Transfer to a plate.
- To the same pan add the coconut sugar, honey, water and salt. Let the coconut sugar dissolve (about 2 mins). Add the cardamom and the baking soda. Keep stirring until it turns a but foamy (about 1 min). Now add the sesame seeds and the cashew pieces back and stir to mix everything well slowly keeping heat on low. Stir and mix for about two mins and then turn heat off. Take a plate and spread the butter on it all over. Immediately transfer the sesame mixture onto this. Take a glass or a small bowl and spread coconut oil or butter over the base, Now flatten the mixture using this glass or bowl. Let the mixture cool for about 5 minutes.
- For making ladoos: Apply coconut oil or butter on your palms and take small portions of the mixture and make balls by shaping the mixture between your palms. Let cool.
- For making brittle or chikkis: Use a serrated knife to make cuts on the mixture on the plate and form either diamonds or squares. Let cool.
